Oven baked ribs and cheese potatoes

Hello and once again welcome to cooking crisis! Today I am here with Jordan to share a wonderful recipe for oven baked ribs and cheesy potatoes that are sure to impress anyone you have over. Honestly, this is one of the easiest ways to make friends that I have ever experienced, and the end product is really, really good!

What you are going to need:

1. A good set of pork spare ribs
2. A bottle of your favorite BBQ sauce
3. Tin foil
4. Baking pan
5. A nice spicy rub
6. Time! It takes around 2 and a half hours to bake.

For the rub you'll need:

(Credit goes to Jordan completely for this)

2 1/2 T chili powder
2 T ground cumin
1 T ground coriander
1 T salt
1 T paprika
1 T dark brown sugar
1/2 T black pepper
1/4 tsp cayenne
1/2 tsp mustard
1/2 tsp garlic powder

The rub is completely optional, but highly recommended.

For the cheesy potatoes you need:

1. A five pound bag of red potatoes
2. 2% milk
3. Cheddar cheese
4. Garlic powder
5. Season salt
6. Italian blend seasonings
7. Corn starch

The corn starch isn't required, but if you want thicker sauce then add the starch.

So let's get this started!

First thing you want to do is prep your pan and your pork spare ribs for baking, after turning the oven at 350°. All you really need is a baking pan and tin foil lining it. You may have to cut your ribs so it'll fit.

Like this:

Now that your ribs are prepped you'll cover them with the rub, after you mix it up. Since it'll be all dry ingredients it's pretty simple to get it blended up.

Apply rub:

Then cover your ribs with a tin foil cover and throw them in the oven for a solid hour at least. (I waited one and a half)

Once your ribs are done, pull them out and get your BBQ sauce and spread it over the ribs. I cheated and put in all the extra rub I had and blended it up.

Then you stick it in the oven and wait another hour or so. The finished product will look like this:

Now the ribs are cooking after putting it in the oven for the start of the second time and still have 45 minutes or so to go, usually at this point I like to make my cheesy Cheddar potatoes. This recipe was my literally running around the kitchen fooling around with food, but dang these are tasty!

First thing you'll want to do is chop up your potatoes. I used the entire 5 pound bag but it was me and my really good guy friends, cut as many as it'll take to feed you guys.

Get those sicker into boiling water and you'll start making sauce! Keep in mind that when it comes to cheese you use as much or as little as you want. I use a lot of cheese but I love it.

So get your little pan, I always use my quiche pan. If you have something else to use go for it, but no metal!

You'll want to add about 2 cups of milk and as much cheese as you want.

Then add the garlic powder,  salt and Italian seasonings, stick it in a microwave for around 4 minutes until the cheese is melted and pull it out. Take a whisk and blend it together. I use around three tablespoons of corn starch but if you want thinner sauce I'd use half.

So check the potatoes, if they are tender then drain and pour into pan with the sauce, after spreading a generous layer of cheese and some more salt/seasonings. Then throw it in the oven with the ribs. At this point the ribs should only have around 10-15 minutes.

This is what the end product should look like:

Super tasty right? For a salad I'd recommend something very light, we make a spinach salad with arugula, green olives and olive oil which was perfect!!

Thank you so much for once again checking out cooking crisis! Sometime next week me and my very good friend Jordan I'm going to be making a sweet and delicious treat for you all, as well as another delicious meal!
